Mulled Ales

Strong, dark malty beers are best.

Serves 2-4 - depending on glass size.

Similar method is used for all.


Recipe 1

1 litre (or 2 pints) ale

1 shot rum or (brandy)

1 tsp sugar

Pinch ground cloves

Pinch grated nutmeg

Pinch ground ginger


Method:

1. Place all of the ingredients into a saucepan, heat but do not allow to boil.

2. Add more sugar & flavouring if necessary, serve immediately.


Recipe 2

1 litre ale

1 shot rum or (brandy)

1 tbs sugar

½ tsp whole cloves

Freshly grated nutmeg to taste






Recipe 3

1 litre ale

2 shots of rum

Stick of cinnamon

2 cloves

Large pinch of grated nutmeg

Large pinch of  ginger

1 tbs (black) treacle or molasses

Handful of raisins & sultanas


Recipe 4

1 litre ale

1 tsp ground ginger

1 tsp grated nutmeg

2 tsp cinnamon

1 tsp ground cloves

3 tbs honey

2 tsp sugar

Mulled Wine

Serves 6.

Similar method is used for all.


Recipe 1

1 bottle red wine

60g Demerara sugar

1 cinnamon stick

1 grated nutmeg

1 orange, halved

1 dried bay leaf

60ml sloe/damson gin (optional)


Method:

1. Put the wine in a saucepan with the orange, sugar, bay leaf & the spices.

2. Heat gently until the sugar has dissolved, add more sugar to taste.

3. Turn off the heat, stir in the sloe/damson gin if you are using it.

4. Strain into heatproof glasses & serve at once.


Recipe 2

1 bottle red wine

75ml green ginger wine

75ml water

50g sugar

1 small orange

1 tsp cloves

½ cinnamon stick

¼ grated nutmeg


Recipe 3

1 bottle of red wine

l clementine

Peel of 1 lemon/ lime

100g sugar

2 whole cloves

½ cinnamon stick

1 fresh bay leaves

1 whole nutmeg

¼ vanilla pod

1 star anise





Recipe 4

1 bottle wine

2 cloves

2 blades mace

2 allspice berries

1 broken stick cinnamon

6 cardamom pods

Zest of 1 lemon

Zest of 1 orange

100g sugar


Recipe 5

1 bottle red wine (Bordeaux is best)

180g sugar

1 slice lemon rind

4 cloves

1 pinch cinnamon


Recipe 6

750ml bottle ruby port

50ml sugar

2 oranges

1/2 tsp ground allspice

1/2 tsp ground mace

1/2 tsp grated nutmeg

12 whole cloves

1 cinnamon stick


Recipe 7

750ml bottle ruby port

1 stick cinnamon

4-5 whole cloves

¼ grated nutmeg

75mm strip of fresh orange peel

Mulled Cider

Serves 8-16 - depending on glass size.

Similar method is used for all.


Recipe 1

2 litres dry cider

2 apples

6 cloves

4-6 cinnamon sticks

5-6 allspice berries

zest of 1 orange & juice

(Dark) rum (optional)


Method:

1. Combine all ingredients in a large saucepan & simmer gently for 20 minutes - DO NOT BOIL.

2. Strain through a fine mesh strainer into a heatproof bowl & ladle into glass mugs. If you wish, you can add a touch of bourbon, brandy, or rum to spike it up a bit. Serve hot. Garnish with apple slices and/or a cinnamon stick to each glass (if desired) & serve.


Recipe 2

2 litres dry cider

6 cloves

3 or 4 star anise

¼ tsp grated nutmeg

1 cinnamon stick

1 vanilla pod, halved

juice of 1 orange

juice of 2 clementines

juice & seeds from 1 pomegranate

50g sugar (to taste)

2 litres dry cider

1 Cox’s apple

1 star anise

2 cinnamon sticks, halved

6 whole cloves

4 tbs honey

2 litres dry cider

50g light brown sugar

2 bay leaves

2 cinnamon sticks

½ tsp whole cloves

½ tsp ground cardamom

½ tsp grated nutmeg

Zest of 1 orange


Recipe 5

2 litres dry cider

1 orange

10 cloves

4 sticks of cinnamon

12 allspice berries

1 tsp grated nutmeg

6 pods cardamon

50g brown sugar


Recipe 6

2 litres dry cider

2 cinnamon sticks

1 tsp grated nutmeg

Zest of one orange

2 whole cloves

30g light brown sugar


Recipe 6, Hot Spiced Cider

2 litres medium cider

4 “thumb sized” pieces of ginger

8-10 cloves

2 sticks of cinnamon

A “generous grating” of nutmeg

50g brown sugar

200ml brandy


Method:

1. Gently simmer the cider, sugar & spines for 3 or 4 mins.

2. Remove from the heat, add the brandy & serve.
